I'm sharing with you my recipe for crispy and delicious Vietnamese savory crepes. No more store bought Banh Xeo mix!!!!

Ingredients

Ingredients for 10 crepes
  1. * Crepes batter, can be made the night before or at least 5-6 hours in advance.
  2. 2-1/4 cup warm water
  3. 3/4 cup coconut cream
  4. 2-1/4 cups rice flour = 270 gr
  5. 6 Tbsp cornstarch =55 gr
  6. 1 tsp turmeric powder
  7. 1/4 tsp kosher salt
  8. 3 stalks of scallions, thinly sliced
  9. * Filling: Can be prepare the night before and keep in the frig until it ready to use.
  10. 1.1 lbs pork loin cut to thin slices, season with 2 Tbsp olive oil + 1/8 tsp pepper + 1/4 tsp kosher salt (Reduce the amount of salt if using table salt.)
  11. 1 lb large shrimp peeled, deveined = 22 shrimps, season with
  12. 1 Tbsp olive oil + 1/8 tsp pepper + 1/4 tsp kosher salt (Reduce the amount of salt if using table salt.)
  13. 1 small onion, chopped
  14. 3 medium size shallots, chopped
  15. * Vegetable oil for frying the crepes
  16. * 10-12 oz bean sprouts
  17. * 2 heads leafy lettuce, washed.
  18. * All sorts of fresh herbs of your choices.

  22. * Preheat the skillet on medium high heat, when the pan is hot then add 1 tsp vegetable oil, 1 Tbsp chopped onion, few slices of meat and shrimp. Saute for 1 minute then pour in 1 ladle of batter ( 1/3 cup) into the center of the pan. Swirl the pan around to move the batter out as thin as you wan. Put the lid on then drop the heat down to medium low. Cook the crepe for 3-4 mins, after that remove the lid add 1 tsp of oil around the edges of the crepe and cook for 2 more mins. Then add a small amount of the bean sprout then continue to cook for 1 more min. Gently fold the crepe in half, remove and serve it immediately. Wrap with lettuce, fresh herbs & Vietnamese dipping sauce.
  23. * To get the crispiness for this crepe you need to use good nonstick, heavy frying pan and to cook it on medium low heat. It may take 7-8 mins to cook each crepe.

Nguyên liệu cho 10 bánh xèo
  1. * Pha bột trước một đêm hay 5 - 6 giờ, rồi cất vào tủ lạnh. Lấy bột ra 30 phút trước khi chiên.
  2. 2-1/4 cup = 270 gr bột gạo
  3. 5 Tbsp = 55 gr bột bắp
  4. 1/4 tsp muối biển
  5. 1 tsp bột nghệ
  6. 2-1/4 cup nước ấm
  7. 3/4 cup nước cốt dừa
  8. 3 tép hành lá thái mỏng
  9. * Phần thịt, tôm có thể chuẩn bị trước rồi cất vào tủ lạnh.
  10. 1.1 pound thịt thăn heo hay có thể dùng ba rọi, thịt đùi. Đừng cắt mỏng quá. Ướp với 1/4 tsp muối + 1/8 tsp tiêu + 2 Tbsp dầu ăn.
  11. 1 pound tôm lớn = 22 con đã lột vỏ và rút chỉ đen. Ướp với 1/4 tsp muối + 1/8 tsp tiêu + 1 Tbsp dầu ăn.
  12. 1 củ hành tây
  13. 3 củ hành tím
  14. * 2 bó xà lách rửa sạch
  15. * Rau thơm tự chọn
  16. * 10-12 oz giá sống
  17. * Dầu ăn để chiên bánh
  18. * Chảo không dính có nắp, đường kính 10 in hay 24 cm.

  20. * Bạn cần phải có chảo dày, không dính và phải chiên bánh lửa vừa thì bánh mới giòn, vàng. Trung bình phải từ 7-8 phút cho một bánh, bạn có thể chiên hai chảo nếu nhà đông người.
