Crispy Fried Wings and Homemade Hot Sauce

Ingredients serve 4-5 people
  1. 2 lbs = 997 gr chicken wings
  2. 1/2 Vidalia onion = 150 gr
  3. 10 Tbsp = 80 gr tapioca starch
  4. 2 egg white
  5. 1 Tbsp = 15 gr sugar
  6. 2 tsp = 10 gr kosher salt
  7. 1/2 tsp = 1,2 gr black pepper
  8. Little more than 1/2 cup = 80 gr all purpose flour
  9. 1/4 cup = 33 gr tapioca starch
  10. * 3 cup of vegetable for deep fry
* Hot sauce
  1. 1/4 Vidalia onion = 100 gr
  2. 3 hot serrano pepper = 55 gr
  3. 4 cloves garlic = 15 gr
  4. 10 mints leaves
  5. 1 small handful baby spinach
  6. 3 Tbsp = 30 gr olive oil
  7. 2 Tbsp = 20 gr olive oil
  8. 2 Tbsp = 40 gr agave nectar (can be substitute for honey)
  9. 1 Tbsp = 14 gr vinegar
  10. 2 Tbsp = 28 gr water
  11. 1 tsp = 5 gr kosher salt
  12. * Allow the wings to marinate in the refrigerator for 24 hours will be best.
